Homemade baked goods are delicious and when you use ingredients grown in your backyard, they’re even tastier! Alaska is at the time of year where flowers are starting to bloom and produce is beginning to grow. What better way to celebrate summer in the land of the midnight sun than to create tasty recipes with AK ingredients.

Alaskan Zucchini can get huge and make the yummiest muffins. My favorite Zucchini muffin recipe is simple but oh so delicious.

Chocolate Chip Zucchini Muffins

Ingredients:

3 eggs
¾ cup oil
2 cups (just under 2 cups) sugar
2 ¾ cup flour
½ tsp baking powder
2 tsp baking soda
1 tsp salt
2 cups zucchini, grated
2 tsp vanilla
3 tsp cinnamon
1 cup of chocolate chips

Beat eggs, sugar, vanilla, and oil in a large bowl.

Stir in zucchini, flour, baking soda, baking powder, cinnamon, salt, and chocolate chips.

Pour into muffin trays or loaf pans and bake at 350 degrees for 20 minutes or until done. Loaf pans will take about 60 minutes.
